Here is a recipe to make goose breast taste bloody delicious.
Goose breast – sliced into 1cm thick steaks
Marinade
Ginger
Garlic
Salt
Pepper
Rosemary
Sweet chilli sauce
Soy sauce
mustard
Marinade sliced breast for a few hours in the fridge.
Coat each steak in flour, dip it in beaten egg, roll in breadcrumbs and fry or bake.
This recipe is really good and is in my opinion the only way to cook goose breast if your not mincing it for salami
Josh, we smash lots of Geese in Texas. Dark geese are best eating. Snow Geese taste like SHIT! We cube up the breast meat and marinate in Lea Perrins Worcestershire Sauce along with season salt for a few hours. Take the goose meat out of marinade and wrap with bacon, cream cheese and Jalapeño pepper. Use tooth picks to hold it all together and grill over hot coals. Pull them off the fire once the bacon is done but goose meat is still on the rare side. Over cooking wild game kills the flavor! Give it a try! You can also switch it up and make an Asian type marinade and that works great as well. Cheers Bro
